OSAKA -- Major Japanese conveyor belt sushi chains are ramping up efforts to monitor their products and prevent food tampering after a recent string of videos on social media showing such disturbing behavior as customers licking soy sauce bottles.

Kura Sushi will introduce artificial-intelligence-based monitoring nationwide by early March. Using cameras already installed to monitor conveyor belts, it will detect suspicious opening and closing of sushi plate covers, for example.
